...this Marchant Schmidt pneumatic cheese portion wire cutter is a two-stage cheese cutting machine; a two-dimensional cheese block pre-cutter designed for cheese block reduction, and to produce a variety of cut sizes and shapes: cubes, sticks, bars, bricks and chunks for further processing applications. Cheese is pushed vertically, then horizontally, through both cutting grids, so as to cut two dimensions with one block placement.

FEATURES:

Designed for standard 40 pound 20 kilogram cheese loaves:

Recommended 34F - 45F (1C - 7C) product temperature for optimal cutting.
11.5 inch by 14.5 inch by 7.5 inch high maximum product input.

This cheese portion wire cutter came with two sets of harp wire cutting grids set for 1.5 inch cubes, either of which could be easily reset to cut other shapes / sizes. Call 315-589-4511 to discuss your cheese cutting specifications.
Manufacturer rated for up to 50 cycles / 2,000 lbs per hour. In our testing, cycle time was faster, about 40 seconds (but running without product).
36 inch high infeed, 22 inch discharge height.
Two-hand activation operator control for added safety.
All food grade sanitary stainless steel construction.
110 volt single phase electrical input.
90 psi @ 12 cfm compressed air input.
Previously used in a two-step cutting process, to pre-cut cheese prior to feeding into a shredder.
